Ramen Bowl Assembly Guide
Fact-checked on paper only. This recipe has not been cooked or tested yet.
Why this works
A bowl is built in layers: tare for salt and umami, aroma oil for fragrance, hot broth for body, then noodles and toppings. Noodledex gives 2 to 3 tbsp of tare for 300 to 360 ml of broth, starting at 2 tbsp and tasting before adding more, with the tare in the warmed bowl before the broth [Noodledex]. The amounts of each house tare below come from our own recipes.
Yield: 1 bowl (about 500 ml of liquid before toppings) Times: prep PT5M, cook PT5M, total PT10M (ISO 8601)
Equipment
- Ramen bowl
- Kettle for warming the bowl
- Ladle
- Chopsticks
Ingredients
- 25 to 35 ml (1.5 to 2 Tbsp) shoyu tare, OR 25 to 30 ml (1.5 to 2 Tbsp) shio tare, OR 30 to 40 g (2 to 2.5 Tbsp) miso tare
- 10 to 20 ml (2 tsp to 1 Tbsp) aroma oil (scallion oil for shoyu or shio, mayu for tonkotsu)
- 300 to 350 ml (1 1/4 to 1 1/2 cups) hot broth
- 1 portion fresh noodles, about 120 g
- Toppings: chashu slices, 1/2 ajitsuke tamago, menma, sliced scallion, nori
Steps
- Warm the bowl with boiling water for 1 minute, then pour it out.
- Spoon the tare into the bowl, then the aroma oil.
- Bring the broth to a rolling boil and ladle it in, stirring briefly.
- Boil the noodles and drain them well.
- Place the noodles in the bowl and loosen the strands with chopsticks.
- Arrange the chashu, egg and menma, then scatter scallion and set the nori last.
- Serve at once.
What to watch for
- Start with less tare. You can add more, you cannot take it out.
- Cold tare cools the bowl. Take it out of the fridge a few minutes ahead.
- Noodles soften fast. Eat right away.
- House tares are salty by design. Taste after the broth goes in.
Storage
- Do not store an assembled bowl. Store each part by its own recipe: broth 3 to 4 days, chashu 3 to 4 days, eggs 3 to 4 days, scallion oil and mayu 4 days (refrigerated).
- Reheat broth to 165 F (74 C) and a rolling boil before assembling [USDA FSIS, Leftovers and Food Safety].
Allergens: Depends on the parts you use: wheat, soy, egg, sesame, fish.
Pairs with
Any broth in this collection. Shoyu with chintan, shio with chintan or the vegan broth, miso with paitan, tonkotsu with mayu.
